Is it just me or does Fall make you want to wrap yourself up in a blanket and just EAT ALL THE FOOD!? And I’m not talking salads and fresh fruit platters – I mean COMFORT FOOD – usually heavy in fat and simple carbs (the BAD kind), and after eating them, you really don’t feel like doing much else…
I’m thinking there’s a better way to enjoy the feeling we get from those foods – one that doesn’t make us go into a carb coma – so I’m inspired to share some of my favourite comforting (but also healthy!) recipes with you all over the next week. I love the smells and flavours of fall, don’t you!? Like I said, we traditionally go to highly processed foods during the colder times of year, and that usually means meals that are higher in fat and less “clean” than the foods we may have been eating in the summer. So, my goal is to show you guys that you can still enjoy the tastes of your favourite comfort foods, but with a nutritious twist!
Butternut Squash Chili
INGREDIENTS
makes 4 servings
2 Tbsp olive oil
1 onion, chopped
3 cloves garlic, finely chopped
1 large can diced tomatoes
3/4 cup water
1 Tbsp chili spice
2 pinches sea salt
1 medium butternut squash
2 15 oz cans black beans (drained)
DIRECTIONS
- In a large pot, add the onions and olive oil and simmer until softened.
- Stir in the garlic, tomatoes, chili spice, and squash. Add the water and season with salt and pepper. Simmer for 20 minutes.
- Stir in the beans and simmer for an additional 6 to 10 minutes or until squash is cooked through.
