Yes, it’s February tomorrow and I’m still making pumpkin-flavoured treats, so what!? These are actually 21 Day Fix approved and 2 bites count as 1 purple and 1/2 blue so they’re perfect for breakfast or an afternoon pick-me-up! Also, only dates and pecans bind these bites together, so they’re naturally gluten-free and vegan 🙂

Pumpkin Pie Energy Bites (Serves 8 – 2 bites each)
INGREDIENTS
1 cup pitted medjool dates (soaked in warm water)
1/2 cup raw pecan halves
1/3 cup canned pure pumpkin puree*
1/4 cup unsweetened coconut flakes + more for garnish
1 tsp pure maple extract
1 tsp pure maple syrup
2 tsp pumpkin pie spice
1 pink sea salt

DIRECTIONS
- Place dates in a medium bowl with enough warm water to cover. Let soak 10 minutes. Drain & set aside.
- Place pecans in food processor; pulse until finely ground.
- Add dates, pumpkin, coconut, extract, maple syrup, pumpkin pie spice, and salt; pulse until combined. Place in a medium bowl & refrigerate, covered, for 30 minutes.
- Roll into tablespoon-sized balls & then roll in coconut (if desired).
- Store, refrigerated, in an airtight container.
*NOTES: Make sure to buy PURE pumpkin, not pumpkin pie filling, as the latter has added sugar and other unnecessary ingredients. Both kinds are usually right next to each other at the grocery store, so pay attention 🙂
